MINT RICE RECIPE
INGREDIENTS FOR SAUTEING AND GRINDING
Oil - 1 tsp Garlic - 4 nos Ginger - 5 nos (1inch) Green chilies - 2 nos Tamarind - a small piece Roughtly chopped onion - 1/2 Cleaned mint leaves - 1 handful Cleaned coriander leaves - few Water for grinding - 1/4 cup
INGREDIENTS FOR TEMPERING
Oil - 1 tbsp Mustard seeds - 1/2 tsp Urad dal - 1 tsp Chana dal - 1 tsp Groundnut seeds - 2 tbsp Sliced onion - 1/2 Turmeric powder 1/4 tsp Asafoetida - 1/8 tsp Salt - 1 tsp +1/4 tsp (as required) Water - 1/4 cup Cooked rice - 4 cups

Method:
1. Take cleaned mint leaves in a bowl, rinse well and set aside.
2. Heat a pan, add chopped onion, ginger, garlic, green chilies, tamarind, mint leaves, coriander leaves and saute for 2 minutes in medium flame.
3. Cool down the mixture, place it in a blender jar, add water and grind it into smooth paste.
4. Heat oil in a kadai, add chana dal, urad dal, groundnut seeds and fry until it turnd golden brown in color.
5. Add sliced onion, turmeric powder, asafoetida powder, ground paste, salt, water, mix once and cook for 2-3 minutes in high flame.
6. Turn off the flame, add cooked rice, mix well and serve. |
