CUCUMBER SALAD RECIPE

INGREDIENTS

Cucumber / southekai - 1 no
Finely chopped green chili - 1 no
Finely chopped coriander leaves - few
Salt - 1/4 tsp [as required]

INGREDIENTS FOR TEMPERING

Cooking oil - 2 tsp
Mustard seeds / kadugu - 1/2 tsp
Dry red chili - 1 no
Asafoetida / hing / perungaayam - 1 pinch
Curry leaves - 1 string


Preparation time : 5 minutes
Cooking time : 5 minutes
No of servings : 3 nos
Cuisine : South Indian
Coarse : Salad 

Method :

1) Take a large cucumber, discard the edges and peel the skin of the cucumber.

2) Cut the cucumbers into halves, slice them thin and then chop them very fine.

3) Place the chopped cucumber in a bowl, add salt, mix well and rest for 5 minutes.

4) After a while, drain the excess water and take only the drained cucumber.

5) Add chopped green chilies, coriander leaves and mix well.

6) Heat oil in a kadai, add mustard seeds, crackle them and add urad dal, red dry chili, asafoetida, curry leaves and fry them.

7) Add all the tempered ingredients in the salad and serve.

Take a large cucumber

Discard the edges

Peel the skin

Wash the peeled cucumber

Cut them into halves

Slice them thin

Chop them very fine

Chop everything in the same way

Place the chopped cucumbers in a bowl

Add salt


Mix well

Rest for 5 minutes

After a while, drain the excess water


Take the drained cucumber

Add chopped green chili and coriander leaves

Mix them well

Take ingredients for tempering

Heat oil in a kadai and add mustard seeds

Let them crackle

Add urad dal

Add red dry chili

Add asafoetida

Add a string of curry leaves

Fry them

Add them in the cucumber salad


Mix well

Serve
