SPONGE CAKE RECIPE IN COOKER
This is my first cake post in the blog, this resulted very nice and it's texture was simply awesome, and so spongy, this cake could be served with tea in the evening.
INGREDIENTS
Refined oil - 1/4 cup Egg - 1 no Milk - 1/2 cup Sugar - 1/2 cup Maida / all purpose flour - 1 cup Baking powder - 1 tsp Salt - 1 pinch Vanilla essence - 1 tsp Chopped badam / almonds - 5 nos
Preparation time : 15 minutes Cooking time : 40 minutes No of servings : 4 members Coarse : snacks
Method :
1) Greece a 8 inches [diameter] and 2 inches [height] pan very well with some oil, spread the oil on the sides and the surface and place a butter sheet sheet on it and again greece oil on thee sheets and set aside.
2) Take a 7.5 litre pressure cooker and remove the gasket[ rubber ring] and also remove the weight [whistle],place a heat proof stand or a ring in the cooker. Now place the cooker on the stove top in a low flame and pre - heat for 10 minutes in a low flame.
3) Take a mixing bowl and add 1/2 cup of milk, 1/4 cup of oil, break an egg, 1/2 cup of sugar. Use a wire whisk to beat them and keep on mixing for 5 minutes and now everything is being well combined and the sugar has dissolved well.
4) Place a sieve on the bowl and add 1 cup of maida flour and sieve, add 1tsp of baking powder and a pinch of salt. Strain them through a sieve very fine and whisk it to a smooth batter, but do not over do the mixing.
5) Mix well if there are any lumps, if there are tiny lumps in the batter it's fine. Add a splash of vanilla essence and mix once, use a spatula to scrap the sides and take a cake tin pour the batter in the pan and gently tap to release the air bubbles.
6) Sprinkle some chopped almond on top and now the cake batter is ready, open the pre- heated cooker carefully and place the cake pan in the pressure cooker, secure the lid of the pressure cooker and remember to take off the vent weight [whistle] and cook for 40 minutes in a low flame.
7) So that consider an average time of 35 to 50 minutes depending on the cooker you use, you can open the lid and check the cooker cake while it's baking by using a squer, knife or any stick.
8) Now open the lid insert a stick, it should be clear without sticking any cake batter in it, let the cake cool down for room temperature and use a knife to scrape the sides and flip over on a plate. Remove the butter sheet from the cake and flip over the cake. Slice a piece of it and serve.
